This is because those bags can be vacuum-sealed to keep all the freshness right inside, which is extremely important for coffee. Because everything can be compacted together, and still retain a nice shape, it doesn’t run into the aesthetic issues that other products, such as beef jerky, does when it’s placed under a vacuum seal.
